Shabu Shabu


Shabu shabu is a kind of "fondue chinoise" (Japanese people won't agree with that, but it is) which is cooked in a pot on the table. Very thinly sliced beef or pork is cooked with lots of vegetables, and dipped in a sauce. The name of shabu shabu probably comes from the action we make when cooking meat. Because it is sliced so thinly, it only has to be cooked for a few seconds (something like 4!), saying shaa-buu-shaa-buu...


The meet we had for shabu shabu last weekend was Miyazaki beef, from the island of Kyushu. It was quite delicious. I was wondering if these cows get the same special treatment as those who will "become" Kobe beef, the best and most expensive (about 20E/100g) beef in the world. The lucky chaps are (supposedly) fed on beer, and are massaged with Sake on a daily routine. Mellow, relaxed cows apparently make good beef.

Pour les francophones: J'ai ajoute' un link (a droite) du blog de Pipo au Japon. Je l'ai decouvert parmi les blogs des internautes de LeMonde. Si je dessinais aussi bien que lui mon blog ressemblerait au sien (on peut toujours rever). Bref, je le trouve un peu different des autres blogs et ses posts sont courts et varies. Peut etre qu'il peut vous donner une certaine idee du Japon.

  • Matsuzaka beef

    According to this page (which is about another famously expensive brand Matsuzaka-beef), they spray sho-chu (Japanese version of vodka) while massaging with a brush so that the cow's fur becomes shiny. An effort made to attract higher biddings when it is paraded at the meat dealer's market, I guess.
